Anytime Spring & Summer Rolls

After a few days of heavy eating – turkey, mashed potatoes, gravy, stuffing, pumpkin pie – and so much, much more … it’s time for a small reprieve from food coma town. And these light and healthy spring rolls are just the ticket!

There are only so many turkey sandwiches, turkey “bowls” and turkey soups a person can enjoy before the taste buds start to rebel. (According to my daughter, a turkey “bowl” is a layer of leftover Thanksgiving turkey topped with gravy, topped with mashed potatoes, more gravy, dressing, more gravy, a little more turkey …and a final gravy top off.)

With all those gravy layers the day after Thanksgiving, it’s no wonder she was over right after she woke up today. She was raring to go on our annual post holiday spring rolls. They are just the perfect break from all that heavy food.

But of course … post holiday meals don’t have a monopoly over these fresh and light rolls! As a side dish or an entree on a hot “no cook” day, you can’t go wrong with these Anytime Spring & Summer Rolls.

Yeah, that’s right. I’m calling them Spring Rolls and I’m calling them Summer Rolls. I’ve always called them Spring Rolls, but I was in a Vietnamese restaurant a couple of years ago, and noticed Summer Rolls on the menu (that looked a lot like my Spring Rolls).

Do you know what the difference is between Spring and Summer when it comes to rolls? I thought I did. But then Google told me I didn’t. But then another search proved I was right the first time. And another contradicted my previous revelations. So I’ve decided to call them whatever I feel like in the moment.

Go ahead. Check out these Anytime Spring & Summer Rolls, and as long as you love them, call ’em whatever you want!

Spring (Summer) Rolls

  • Rice Paper Spring Roll Wrappers
  • Leftover Turkey, Cooked Shrimp or Protein of Choice
  • Soy Sauce
  • Rice Wine Vinegar
  • Sesame Oil
  • Chopped Cilantro
  • Strips of Carrots
  • Strips of Cucumber
  • Sliced Radishes
  • Bean Sprouts
  • Leafy Lettuce
  • Diced Jalapeno
  • Cellophane Noodles
  • Sweet Chili Sauce
  • Hot Chili Oil
  1. Mix together soy sauce, rice wine vinegar and sesame oil; adjusting quantities to taste. Add shredded turkey and marinate while prepping rest of ingredients.
  2. Prepare cellophane noodles according to package directions.
  3. Prepare spring roll wrapper according to package directions.
  4. Lay out spring roll wrapper and veggies, noodles and protein in middle of wrapper. Fold up each end and roll up tight.

  5. Whisk together soy sauce, hot chili oil, rice wine vinegar and sesame oil to taste for dipping. In a separate dish, pour sweet chili sauce for an additional dipping.
  6. Enjoy!
